Rain and clouds and thunderstorms and more rain and more clouds and.......that's pretty much it for today. High of 78, but who cares?

Today is a day near and dear to my pre-low-carb heart - it's "National Pierogi Day"! I was lucky enough to have two older women in my life who were probably the BEST pierogi makers ever. My first mother-in-law was #1; she was Slovak and made sure you pronounced it "Peer-rho-hee" and NOT just "purr-o-ghi". And they always had to be boiled and then fried in butter; her potato and onion stuffed pierogis were beyond description. My Great Aunt Lou from Pittsburgh was the second-best , but she was Polish and always called them "purr-o-ghi", but they were almost as good as my MIL's. Two of the best cooks I ever knew. :rok:

And NO, there are no satisfactory low-carb solutions to this particular puzzle. :?

I'm afraid I would be carb-ing it any day someone made actual pierogies....
